A Simple and Colorful Recipe

This recipe makes a colorful addition to a meal.  It is sweet and can be used for a side dish or dessert.  I like to serve it with ham or poultry, assorted salads and rolls.

1 can Eagle Brand milk
1 20 oz. can crushed pineapple, drained well
2 c. coarsely chopped pecans
1 (8 oz.) container Cool Whip
1 can cherry pie filling (or blueberry)
2 cups miniature marshmallows
Optional:  banana sliced and folded in just prior to serving

Mix first 4 ingredients; fold in cherry pie filling. Cover and refrigerate overnight before serving.

Hint:   I drain my pineapple on a spatter screen used for frying. Just lay it over your sink and press on the pineapple. 

Keeps for several days and makes about 12 servings.

When planning a buffet it is nice to have an assortment of side dishes.  I usually include a bean dish, fresh green salad, fruit salad, and a potato or cold pasta dish along with fresh cut vegetables and cheese.  Color is very important in meal planning because it adds appeal.  Try to visualize how your prepared recipes will look together.
