Another Super Bowl Recipe
Easy to make ahead! You may want to double or triple this recipe as it only serves 3-4.
Pepperoni Pizza Potato Skins
Ingredients:
2 large potatoes, baked, cooled completely, quartered lengthwise*
1/3 cup pizza sauce
1/3 cup pizza sauce
2 oz pepperoni, finely chopped
1/3 cup part-skim mozzarella cheese, shredded
*Be certain to let the
potatoes cool before you cut them and scoop out the inside. I cook them the day before in the microwave.
Directions:Preheat oven to 425ºF. Thoroughly spray a baking sheet with a non-stick cooking spray.
Cut the cooled potatoes in half. Scoop out the center, leaving about 1/2' of the flesh on the skin. Then cut in half again. (I do it this way because it is easier to scoop the potato out of a half than the quarters.) Once scooped out, cut in half again, making quarter slices. Gently place the potato skins on the baking sheet that has been coated with non-stick cooking spray. Layer two teaspoons of pizza sauce over each potato quarter; then sprinkle the pepperoni and cheese over the potatoes.
. Bake until cheese melts and potatoes are hot, approximately 6 to 8 minutes.
Serve with extra sauce for dipping, red pepper flakes and parmesean cheese.
Makes 4 servings.
Serving Size: 2 potato skins
Tip: You can make your own sauce if you like, and if you save the potato flesh, you can make mashed potatoes or potato soup.
