Salisbury Steak the Easy Way

This recipe can be made into patties or meatballs.  I serve the patties with mashed potatoes and the meatballs with rice or as an appetizer.

Salisbury Steak


1 1/2 lbs of ground beef
1 egg
1/2 cup quick cooking oats (uncooked)
1/2 onion, minced finely
1/3 can of Golden Mushroom Soup, undiluted  (you need two cans of soup)

Mix together.  Form into four patties and place in a shallow baking dish.  Bake at 350 degrees for 30 minutes.

Mix remaining soup with 1 1/2 cans of water. 

Remove the meat from the oven after 30 minutes, pour remaining soup over the meat.  Place back in the oven for another 15 minutes. 

This is a nice alternative to meat loaf and a great comfort food for a cold day.  Mixed vegetables and potatoes complete the dinner. 

Hint:  I often make my fresh mashed potatoes the day before, especially for holidays because it is one less thing to prepare at the last minute.  Just reheat in the microwave and stir in a little milk to fluff.  Mashed potatoes freeze well, too.  Left over potatoes can be turned into a potato-corn chowder for another meal.
