Valentine Sugar Cookies
Valentine cookies are a fun way to let others know you are thinking of them. This recipe is my all time favorite for sugar cookies. Although rolled cookie dough can be difficult to handle, this recipe is quick and easy to work with, great anytime. You can make the dough ahead and refrigerate or freeze it, but you can also use it immediately.
1 1/2 cup sugar
2/3 cup Crisco shortening (not butter or margarine)
Cream sugar and shortening together and add the remaining ingredients, mixing well:
2 eggs 2 Tablespoons milk
3 1/4 cups all purpose flour 1 teaspoon vanilla
2 1/2 teaspoons baking powder 1/2 teaspoon of salt
Roll out 1/3 of the dough at a time on a lightly floured surface to 1/4 inch thick. Cut with cookie cutters and place on an ungreased cookie sheet. Place unused scraps back in the bowl and mix with remaining dough, repeat until all dough is used. Bake at 400 degrees for 6-8 minutes.
Do not let these brown on top, just brown slightly on the bottom. The time can very by the size of the cookies and your oven. They will puff slightly but do not spread.
Tip: Crisco really makes a difference in this recipe, do not substitute a store or other brand.
Take the time to make the frosting, it tastes so much better than the tubes or cans.
Frosting:
1 lb. powdered sugar
1/2 cup Crisco shortening
1 Tblsp. butter or margarine
1 tsp. vanilla
Tint desired color with food coloring
Enough milk to hold shape for piping.
Beat all ingredients until fluffy and smooth.
I place the decorated cookies on a disposable baking sheet and let the frosting "set up". They can also be made ahead and frozen in this manner. Freeze to set up the frosting and then wrap them and place back in the freezer.
Enjoy.... not only are they delicious, they have a lovely vanilla aroma and it is hard to eat just one!
The first secret is to use a pastry cloth, lightly floured.
