Microwave Enchiladas

I found this recipe about 25 years ago and still enjoy it.  You can make it all in the microwave, or brown the beef and onions on the stove top.  It can also bake in a regular oven at 350 for 20-25 minutes.

Microwave Enchiladas

1 medium onion, chopped finely
1 T. water
1 1/2 lb ground beef

1 cup shredded Cheddar cheese
1/2 cup sour cream
1 tsp seasoned salt
1/2 tsp pepper

10-12 flour tortillas (smaller size)
1 15 oz can of tomato sauce
1/2 cup chopped bell pepper  (I like to make a couple of sliced rings to place on top)
2 tsp chili powder
1/2 tsp oregano
1 minced garlic clove or 1 1/2 tsp garlic powder
1/2 cup water

1 cup of grated Cheddar cheese
Optional: sliced black olives on top with cheese

Combine onion and water in a 1 1/2 quart casserole (cover with plastic wrap), microwave 2-3 minutes until tender.  Add crumbled raw ground beef.  Microwave 2 1/2 minutes, stir and microwave another 2 1/2 minutes.  Drain.  Add cheese, sour cream, salt and pepper.  Set aside.  Wrap tortillas in paper towels and microwave 1 minute.  Combine tomato sauce with remaining ingredients.  Pour half of tomato sauce mixture into a 12x8 inch dish. 

Place 3-4 Tablespoons of meat mixture in the center of each tortilla and roll.  Place seam side down in dish.  Top with remaining sauce.  Cover with plastic wrap and heat 11-12 minutes.  If you don't have a turn table in your microwave, rotate half way through heating.   Remove and top with 1 cup of shredded Cheddar cheese.  Set aside for a few minutes for cheese to melt.

Serve with sour cream and salsa on the side and a green salad.
