Microwaved Complete Chicken Dinner
Microwave Chicken Dinner Casserole- Serves 6
2 10 oz boxes of broccoli or frozen asparagus spear
(you can use fresh if preferred)
1/4 cup margarine
1/2 cup slivered almonds
1/4 cup flour
1 tsp salt
1/2 tsp pepper
2 can chicken and rice soup
1 cup cooked white instant rice
1 cup chicken broth
3 cups cooked chicken breast, cubed
Paprika
Note: Cut broccoli stalks and florets/ asparagus spears into bite-sized pieces.
Cook broccoli/ asparagus according to the box directions or until just tender. Set aside.
Microwave butter until melted. Mix flour, salt and pepper in butter. Whisk as you add soup and broth to butter. Microwave 3-5 minutes, stirring every minute until thickened. Stir in 1/2 cup of almonds. In a 12x8 dish, place broccoli/asparagus on the bottom, cover with cooked rice and top with chicken. Pour sauce over the other ingredients. Sprinkle with paprika for color. Cover with plastic wrap (vent a corner) and microwave 5-6 minutes at 80% power or until completely heated. Turn half way through cooking if you don't have a turntable. Garnish with additional almonds and parsley if desired.
Serve with fruit salad and muffins or biscuits.
