A Hearty Soup for A Cold Winter Day

This soup is a favorite but be warned, it is not low in calories but worth every bite!  It is very thick and filling.  No side dishes are necessary but a good crusty bread is a perfect addition. 

I hope you will try it and enjoy it as much as we do.

                                    Northwoods Soup 

 
1 Box of Uncle Ben’s Wild Rice                                                                   1 cup thinly sliced celery
     (cooked with seasoning packet)*                                                         1 cup shredded carrots
2 cups cubed chicken or turkey                                                                  1 medium onion minced finely
1 cup of cubes ham                                                                                       1 quart Half and Half*
    (if you omit ham, use 3 cups of poultry)                                                2 ½  cups chicken broth
1/4 cup cooking sherry or ¼ cup more broth                                           Salt and pepper to taste

                                                ¼ cup flour                 3 Tblsp. butter or margarine melted

In a Dutch oven combine all ingredients EXCEPT flour and margarine.  In a small bowl mix flour and margarine until smooth,
slowly stir into the soup mixture.  Continue stirring and cooking until thickened, about 15 to 20 minutes. 
* I use the quick cooking Uncle Ben's wild rice mix to save time and can't tell the differnece.
* Please do not substitue for the Half and Half; it will not be the same.
