A Cookie Meant for Christmas Time- Vermont Maple Pecan Cookies
I love maple anything. This recipe fills the house with the sweet aroma of warm maple syrup. Even better, they are delicious, soft, cake-like cookies. This is in my "favorite recipes" file.
Cookie recipe:
1/2 cup Crisco shortening (do not use butter or margarine)
1 cup brown sugar
1/2 white sugar
2 eggs
1 cup sour cream (not low fat)
1 Tablespoon maple flavoring extract
2 3/4 cups all purpose flour
1/2 teaspoon soda
1 teaspoon salt
1 cup pecans (or walnuts, if you prefer)
Cream Crisco, sugars and eggs until creamy. Stir in sour cream and maple flavoring. Mix in salt, soda and flour. Fold in nuts.
Drop by rounded spoonfuls onto greased cookie sheet. (They will puff up but don't spread very much. I did 4 across and 6 rows.) Bake at 375 for 8 to 10 minutes until lightly brown on the bottom.
Maple butter glaze:
1/2 stick of butter melted and browned. Once brown, add 2 cups powdered sugar and 2 teaspoons of maple flavoring. Add 2-4 Tablespoons of water, if necessary to make a smooth spreading consistency.
