Dough:
1 cup of room temperature unsalted butter
1 cup sifted confectioners sugar
2 egg yolks (save the egg whites for meringue cookies or divinity)
1 tsp vanilla
2 cups sifted all-purpose flour
1 tsp baking powder
1/4 tsp salt

For Filling:
Apricot or blueberry jam (without seed or fruit pieces). Do not use jelly or preserves.

For Dipping:
2 cups of Ghirardelli chocolate melting wafers (Note: they are chocolate flavored. If you want 100% chocolate, use chocolate chips with 2 tsp of Crisco shortening or coconut oil)

Your choice of sprinkles for the top.

Heat oven to 350 degrees. Line baking sheets with parchment paper. Use the center rack of the oven.

Directions:
    Use the paddle attachement of the mixer. Beat softened butter on high speed until light and fluffy, scraping the sides as needed for about 2 minutes.
    Add the sifted powdered sugar with the mixer on low until incorporated, then increase the speed to high, scraping the sides when necessary. Beat until the mixture is very fluffy, about 3-4 minutes.
    Add the egg yoks one at a time, completely blending after each. Add vanilla and completely blend.
    Sift the flour, baking powder and salt together. Add a 1/4 cup at a time to the butter mixture. Using low speed, continue to the flour is just combined and the dough is smooth. Do not over mix.

Traditionally, this recipe uses a star piping tip with a pastry bag, making 2 inch pieces on the parchment paper. HOWEVER, since the consistency is like a soft pie crust, I have found it is much easier and quicker to roll the dough into a long narrow log, about 1 inch in diameter.  Using just enough pressure to make shallow lines, run a fork down the center of the log from top to bottom. Cut into 2 inch piece and place on the parchment paper. 

Bake about 12 minutes, until just starting to brown on the bottom edge. Cool on the pan for 5 minutes and transfer to a rack to become room temperature.

Spread jam on one cookie and top with another. Holding the sides together, dip one end in chocolate, place on waxed paper and top with sprinkles.
